242. Lemon Lime Cookies
I saw this recipe in a book I was reading and I thought maybe I would give it a try. Elise has never liked a cookie and I am on the hunt for one she will eat. Well, she loves these. We all really liked them and you can make them in any flavor
*1 package of Kool Aid powder, any flavor
*1 2/3 cups sugar
*1 1/4 cups softened butter
*2 eggs
*1/2 tsp salt
*1 tsp baking soda
*3 cups flour
*1/2 cup sugar
Mix the Kool Aid and sugar together and add the sugar until its fluffy
Add the eggs and mix well
Mix in the salt and baking soda
Add the flour in half-cup increments
Make into 2 tsp balls and roll in the 1/2 cup sugar
Bake for 10-12 minutes
243. Mini Deep Dish Pizza
The kids thought that these were really cute and we did not have cut up pizza!
*premade or home made pizza dough
* pizza sauce
*shredded mozzarella cheese
*pizza toppings
Preheat oven to 425
Place squares of dough into muffin pans
add the pizza sauce and cheese
top with whatever your family likes
Cook for 12 minutes, mine cooked fast!

220. Steak Pizza
This was so good. I knew that my kids would not eat it so I made them their own pizza....so I cant tell you if its for kids or not.
*1 steak (I used sirloin)
*1 pre-made pizza crust
*8 ounces provolone cheese
*1 cup grated cheddar cheese
*2 TBSP spicy mustard
*2 tsp Monterey steak seaoning
*half a small onion, chopped
*2 tsp olive oil
In a small skillet heat the olive oil over medium heat
Add half of the steak seasoning and cook until clear
Sprinkle the rest of the seasoning on the steak and cook as you like. I just threw it in a skillet
Spread the mustard on the pizza crust
Cover with provolone cheese, then cheddar and top with the steak that has been sliced.
Add onion and cook for 7 minutes

So I made my own...just buy the stuff from Pillsburry! I am not going to lie. It was just as good and so much easier to make.
222. Ginger Salmon
So there is a song by Barenaked Ladies, its on the kids cd. The guys talk about things they like and dont like. In the song one of the guys I dont like salmon....so we can not tell Elise what this fish is!
*2 tsp olive oil
*1 TBSP honey
*1 TBSP Dijon mustard
*2 tsp ginger
*1 lb salmon
Mix the olive il, honey, mustard and ginger in a bowl
Brush over salmon
cook for 15-20 minutes in a 350 oven or until fish flakes with a fork

133. Marshmallow Fluff Cheesecake
Today is Elis last day of school and when I asked what he wanted for dinner he told me cheesecake. I dont know where he got that and I am not sure he ever had cheesecake before. So since I still had one of the marshmallow fluff left I thought this was perfect. It smells great. The filling tasted good!
*24 onces Cream cheese, softened
*1 container of fluff
*2 eggs
*3 TBSP flour
*9 inch graham cracker crust
Mix together and pour into crust
Bake at 350 for 45 minutes
Turn oven off and crack open the door for an hour
134. Real Italian Calzones
This was really good. I have a lot of respect for those ladies who make dough everyday! It was messy and not that easy. It was really good.
*1 (.25 ounce) package active dry yeast
*1 cup warm water
*1 tablespoon olive oil
*1 teaspoon white sugar
*1 teaspoon salt
*2 1/2 cups all-purpose flour, divided
*1 teaspoon olive oil
*1/2 cup ricotta cheese
*1 1/2 cups shredded Cheddar cheese
*1/2 cup diced pepperoni
*1/2 cup sliced fresh mushrooms
*1 tablespoon dried basil leaves
*1 egg, beaten
To Make Dough: In a small bowl, dissolve yeast in water.
Add the oil, sugar and salt; mix in 1 cup of the flour until smooth.
Gradually stir in the rest of the flour, until dough is smooth and workable.
Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic.
Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl.
Mix well, cover bowl and refrigerate to chill.
Preheat oven to 375
When dough is ready, punch it down and separate it into 2 equal parts.
Roll parts out into thin circles on a lightly floured surface.
Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork.
Brush the top of each calzone with egg and place on a lightly greased cookie sheet.
Bake at 375 for 30 minutes.
Serve hot.

46. Enchilada Pizza
This is something I never thought about putting on a pizza, but as I was reading through Family Circle I saw it. I thought why not try it. We love Tex Mex and since we are going to Mexico next week, lets get into that frame of mind. Eli did not like it. Told me it was too spicy, which he will say about water on some days! Elise thought it looked gross and would not taste it.
*1 tube pizza dough (I used the thin crust by Pillsbury)
*1/2 cup enchilada sauce (it comes in a can.)
*1 cup shredded cheddar-jack cheese
*1 cup chili bean, drained
*1 cup diced cooked chicken
*1/2 cup jalapeno slices, cut in half
Heat oven 425
Spray baking sheet with cooking spray
Roll out pizza dough
Spread enchilada sauce over crust within 1/2 inch of edges
Evenly scatter cheese, beans, chicken and jalapenos over pizza
Bake 16-17 minutes until crust is golden
Allow to cool and cut!

21. BBQ Chicken Calzone
This was so easy and we really liked it. There is almost nothing I like more than BBQ. I know that there is a lot of fighting about what BBQ is better and here is my thought...is there a bad BBQ?
*4 slices bacon
*1/2 small onion, chopped
*3 cups shredded, cooked chicken breast meat
*2/3 cup barbeque sauce
*1 (10 ounce) can refrigerated pizza crust dough
*1 cup shredded mozzarella cheese
*2 tablespoons chopped fresh cilantro
Preheat the oven to 400 degrees F (200 degrees C).
Fry bacon in a large skillet over medium-high heat until crisp.
Remove from the pan to drain on paper towels; crumble.
Add the onion and shredded chicken to the hot bacon grease in the pan.
Fry over medium heat until onion is tender.
Stir in 1/3 cup of barbeque sauce, and remove from the heat.
Mix in the cooked bacon.
Roll the pizza crust dough out onto a greased cookie sheet.
Press out to an even thickness, and then cut in half.
Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge.
Drizzle the remaining sauce over the filling.
Sprinkle the cheese and cilantro over the top.
Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
Bake for 25 minutes in the preheated oven, or until browned to your liking.
Dave and I both really liked it and was easy to make.
