15. Ground Venison Burgers

Now I know that this is not going to be one that everyone can or will try. My father in law gave us a lot of ground venison over thanksgiving. Its easy to cook with and it much better for you than beef. Since you cant go to our local BiLo to get the meat this may not be the recipe for everyone.

*1/3 cup mayonnaise
*1 teaspoon lime juice
*1 teaspoon Dijon mustard
*1/2 teaspoon grated lime peel
*1/3 cup chopped green onions
*3 tablespoons plain yogurt
*2 tablespoons finely chopped jalapeno pepper*
*1/2 teaspoon salt
*1/2 teaspoon pepper
*2 pounds ground venison
*8 hamburger buns, split
*8 slices Pepper Jack cheese

n a small bowl, combine the mayonnaise, lime juice, mustard and lime peel; cover and refrigerate until serving.
In a bowl, combine the onions, yogurt, jalapeno, salt and pepper.
Crumble meat over mixture and mix well.
Shape into eight patties.
Pan-fry, grill or broil until meat is no longer pink.
Serve on buns; top with cheese and mayonnaise mixture.

I added a touch of bread crumbs to hold the meat together better.
The mayo mixture was great. Even if you dont want to try the venison try the mayo mix. It was good.
The kids ate this with us. So I did not use the jalapeno peppers or put the pepper jack cheese on theirs. Eli told me that he really liked it. Elise had to be made to eat, but since right before dinner she shallowed a marble maybe she was full. (She seems to be fine since the marble but we will watch her!!)
