Todays recipe:
13- SouthWest Dressing
*1 cup ranch dressing
*1 cup honey BBQ sauce
Just mix together and serve over salad. Add corn and black beans to the salad for a treat.
It was easy I almost feel guilty counting this.
14- Chicken Wellington
*2 skinless, boneless chicken breast halves
*2 teaspoons butter or margarine
*1 (3 ounce) package cream cheese, softened
*1/2 cup sliced fresh mushrooms
*1 tablespoon chopped green onion
*1/8 teaspoon salt
*Dash pepper
*1 (4 ounce) package refrigerated crescent rolls
Preheat over to 350
In a skillet, cook chicken in butter 3-4 minutes on each side. (what I did was cut the chicken up before I placed it in the skillet. After it cooked to threw the mushrooms in with it to cook for a few minutes.)
Place chicken in a greased 3-cup baking dish.
In a bowl, combine cream cheese, mushrooms, onion, salt and pepper. Spoon over chicken.
Unroll dough into one long rectangle; seal seams and perforations. If necessary, trim dough to fit top of dish and patch together by overlapping edges. Pinch edges to seal. Place over filling.
Bake, uncovered, at 350 degrees F for 20 minutes or until heated through.
While I was making this tonight Eli told me that it looked "bad" and he hates mushrooms and pickles! I will keep that in mind.
Tomorrow is the start of them eating with us and what we eat. (My husband works late monday, tuesday and wednesday, so they catch a break!!)
